Another chicken creation, with all sorts of goodness hidden within.
Melt the butter in a saucepan, add the onions and soften over a medium heat for about 5 minutes.
Add the carrots and cook for another 5 minutes, then add the chicken and cook, stirring, until it is white. Add the spinach and cook for 2–3 minutes more, until wilted.
