I use salmon and cod for this, but you can substitute haddock, pollack or whatever. As the children get older, I tend to add good smoked haddock, too.
Put the potatoes in a pan of cold water, bring to the boil, then simmer until soft, about 15 minutes. Drain, add 2–3 tablespoons milk and half the butter, and mash until it is smooth.
