I think grapefruit is one of the most neglected fruits in all of pastry. I couldn’t stand the stuff when I was a kid (unless it was covered in sugar), but now I adore the intricate, bitter flavor. The sweet and nutty qualities in black sesame go beautifully with grapefruit curd, and I’ve added a touch of shiso for enhanced complexity. In pastry, bitterness is rarely the star of the show but this particular combination mak
