Marisa passed this recipe on to me and it was given to her by a contadina who makes up many concoctions of her own. I love the way she uses a pot, even though if doesn’t need any cooking, it’s a great way to use up 80 leaves of basil when the plant is rolling out its leaves in abundance.

Ingredients

  • 1 litre (35 fl oz/4 cups) pure alcohol (most are between 96-98%)

Method

Put everything in a pot or wide-necked carafe and cover. Leave for 1 week to 10 days, stirring it each day with a wooden spoon or giving the carafe a shake. Filter with muslin or a fine strainer into clear bottles. Use the bottle the alcohol came in if it’s nice. It is ready to drink immediately. Serve it well chilled after a meal.
