Noodles with Meat Sauce


This simple dish of egg noodles with meat sauce is popular among the office crowd and can be found throughout Bangkok, from street vendors as well as in food courts. The egg noodles are the perfect foil for the sauce as they soak up every bit of flavour.


  • 500 g dried egg noodles
  • 6 lettuce leaves
  • ¾ cup (180 ml) cooking oil
  • 1 teaspoon chopped garlic
  • ½ tablespoon dark soy sauce
  • 2 tablespoons chopped shallots
  • 400 g minced beef
  • ½ cup (125 ml) water
  • 4 tablespoons curry powder
  • 3 tablespoons light soy sauce
  • ½ teaspoon plain flour, blended with 2 tablespoons water
  • salt to taste
  • ground white pepper to taste
  • coriander leaves, chopped


  1. Cook the noodles in boiling water according to the instructions on the packet. Drain.
  2. Line a salad bowl with lettuce leaves and set aside.
  3. Heat half the amount of oil in a wok over medium heat. Add the garlic and brown lightly.
  4. Add the noodles and stir-fry for 1–2 minutes. Add the dark soy sauce and toss well. Place the noodles in the prepared salad bowl.
  5. Heat the remaining oil in a clean wok. Add the shallots and brown lightly.
  6. Add the minced beef, water, curry powder and light soy sauce. Stir well and bring to the boil.
  7. Stir in the blended flour mixture to thicken the sauce. Season with salt and pepper to taste. Lower the heat and simmer for a few minutes, before pouring the mixture over the noodles.
  8. Garnish with coriander leaves and serve.
