Every year my family travelled to Lake Idro to a particular restaurant to eat this risotto during the short season when lake perch is around. It was something we looked forward to all year, and this recipe is a signature dish of the restaurants along the shores of Lombardy’s most famous lakes, Lake Idro and Lake Como. Whiting or flathead fillets would also work beautifully in this recipe.
