Fruit preserved in a mustard-flavoured syrup, mostarda di frutta, is a speciality of both Cremona and Mantua, and a classic accompaniment to Bollito Misto. This version, containing sliced quince, is from Mantua; in Cremona it’s more commonly made with whole fruits.
