  • 1 tbsp tamarind paste
  • 10 cm/4 in piece of lemongrass stalk, tough outer

Method

Put all the ingredients in a mini food processor and process for 1–2 minutes until a thick paste forms, scraping down the side of the bowl as necessary, until well combined.

If not using immediately, refrigerate in an airtight container for up to 1 week, or freeze for up to 1 month.
