Heat a dry frying pan until hot. Reduce the heat to medium, add the seeds or nuts and dry-fry for 1–2 minutes for sesame seeds, or 2–3 minutes for pumpkin seeds, pine nuts and flaked almonds, until lightly brown. (Shake the pan occasionally to ensure they do not burn.) Remove the pan from the heat and transfer the seeds and nuts to a plate.
