Don’t waste the garlic cloves after they flavour the oil in your pan – they can be added to soups just before puréeing for a real garlic hit, or crush them onto toast.

Ingredients

  • 4 tbsp olive oil, plus extra if needed
  • 4 garlic cloves, peeled
  • 115 g/

Method

Heat the oil in a frying pan over a medium-low heat. Add the garlic and fry, stirring, for 3–5 minutes, until lightly browned. Use a slotted spoon to remove the garlic.

Increase the heat to medium, add the bread cubes and fry, turning occasionally, for 3–5 minutes until golden brown and crisp, working in batches to avoid overcrowding the pan and adding extra oil, if necessary. Drain on
