  • 1 tbsp maple syrup, plus extra to taste

Put the soured cream in a small bowl and beat until smooth. Beat in the maple syrup and nutmeg, adding extra to taste, if you like.

If not using immediately, leave to cool completely, then cover and keep refrigerated for up to 4 hours before serving.
