  • 1 cucumber, deseeded and sliced
  • 4 tbsp thinly sliced mint leaves
  • 250 g/

Method

Put the cucumber in a colander, sprinkle with salt and leave to stand in the sink for 20 minutes.

Rinse the cucumber well and pat dry with kitchen paper. Transfer to a bowl, add the mint and yogurt and mix well, then season with pepper.

If not serving immediately, cover and keep refrigerated for up to 4 hours. Just before serving, season with salt and stir.
