Heat a large, heavy-based frying pan over a high heat. Brush the pan with a very thin layer of olive oil and heat until it shimmers.
Reduce the heat to medium-low, add the halloumi and fry for 1–2 minutes until golden brown, working in batches, if necessary. Use a metal spatula to gently turn the cheese over and fry on the other side until golden. Season with pepper. Serve hot, drizzled
