Put the soy sauce, vinegar, brown sugar, garlic, ground coriander, cumin, spring onions and coriander in a large non-metallic bowl and stir until the sugar dissolves. Add the drumsticks, then rub the mixture all over them. Season with pepper. Cover and marinate in the fridge for up to 24 hours.
