  • 1 bone-in smoked gammon hock, about 1.4 kg/3 lb 2 oz

Method

Put the gammon hock in a large saucepan and cover with water. Cover with a lid and bring to the boil over a high heat.

Meanwhile, put the stock, chopped tomatoes, brown sugar, bay leaves, garlic, onion, thyme, cumin and chilli flakes in the slow cooker, stirring to dissolve the sugar. Season with salt and pepper, remembering the gammon might still be salty.
