  • 1 unsmoked gammon knuckle, about 1.4 kg/3 lb 2 oz

Method

Put the gammon knuckle in a large saucepan and cover with water. Cover with a lid and bring to the boil over a high heat. When the gammon water boils, transfer the knuckle to a large colander and drain and rinse well. Transfer the gammon to the slow cooker. Add the stock, cloves and bay leaves, adding extra stock to cover the gammon, if necessary. Season with pepper.
