  • 600 g/1 lb 5 oz butternut squash, peeled, deseeded and cut into large chunks

Method

Put the squash, potatoes, fennel, onion, garlic and thyme in the slow cooker. Add the beef, chopped tomatoes and tomato purée, then tuck the bay leaves among the pieces of beef. Spoon over 4 tablespoons water and season with salt and pepper. The ingredients will not be completely covered with liquid
