Beef shin is one of those underrated, inexpensive cuts perfectly transformed by the slow cooker. It’s an ideal choice for this Italian-inspired two-course meal.

  • 750 g/1 lb 10 oz boneless beef shin, tied lengthways

Method

Put the beef, bay leaves, fennel, celery, onion and fennel seeds in the slow cooker, tucking the vegetables down around the beef, if necessary. Fill the container with water, leaving a 2.5cm/1in gap at the top of the pot, and season with salt and pepper.
