Cooking squid either has to be lightning fast, or slow and gentle, making squid an ideal candidate for cooking in a slow cooker. With chorizo, saffron and chilli flakes, this recipe is inspired by numerous seafood stews along the Iberian coast.

Ingredients

  • 2 tbsp olive oil
  • 150 g/ oz cooking chorizo, skinned and sliced</

Method

Heat 1 tablespoon of the oil in a large frying pan over a high heat. Reduce the heat to medium, add the chorizo and fry, stirring, for 1–2 minutes until it gives off its fat and starts to crisp. Use a slotted spoon to transfer the chorizo to the slow cooker.
