Ingredients: 6 tbsp brandy or orange juice; 1 cooking apple, about 180 g/6¼ oz, peeled, cored and grated; 2 large eggs, beaten; 55 g/2 oz/scant ½ cup self-raising white flour; 125 g/4½ oz/1¼ cups fresh breadcrumbs; 30 g/1 oz/⅓ cup ground almonds; 75 g/2½ oz/⅓ cup firmly packed soft dark brown sugar; 2 tbsp chopped candied orange peel; 1 recipe quantity Brandy Butter, to serve; butter, for greasing; 1 tsp ground cloves; 1 tbsp ground mixed spice; a pinch of salt; 2 tbsp chopped candied lemon peel; 55 g/2 oz/scant ½ cup sultanas; 110 g/3¾ oz/¾ cup currants; 155 g/5½ oz/1¼ cups raisins; ½ tsp ground nutmeg; 150 g/5½ oz grated suet

About

A slow cooker really comes into its own at Christmas. Use it to make or reheat the pudding, freeing up hob space. To reheat, cover with cling film and foil as below, add to the cooker on an upturned saucer and pour enough boiling water into the container to come halfway up the side of the basin. Cover and reheat on HIGH for 3 hours.

Put the raisins, currants, sultanas and brandy in a bowl. Leave to stand for 30 minutes. Add all the remaining ingredients and stir.
