This recipe demonstrates typical Lowcountry ingenuity in the kitchen. Leftover country ham (which can be frozen) is teamed with chutney to make an intriguing spread for crackers. The recipe, while common, is apparently little known outside the area. It is far superior to “deviled” ham.
Put equal parts of ham and chutney through the fine disk of a meat grinder or quickly grind in a food processor. Moisten the mixture with a little cream to make it spreadable. Serve with crackers.
