Sliced Cucumbers

This simple dish is amazingly cool and refreshing. Choose fresh, firm, but not too large cukes and serve the salad with fish dinners in the summer. Do not use waxed cucumbers and do not peel them.


  • 4 unwaxed cucumbers, unpeeled
  • ice cubes
  • 1 cup rice vinegar (available from Oriental grocers)
  • salt and freshly ground black pepper to taste


About 30 minutes before dinnertime, slice cucumbers thinly into a bowl—you should have about 4 cups. Cover with ice cubes and place in the refrigerator. About 5 minutes before serving, remove the ice from the cukes, drain well, and splash them with the vinegar in a serving bowl. Season with salt and pepper and toss again.
