Full of flavour, plenty of garlic and the crunch of pumpkin seeds. Children usually love this dish so it is a great way to get them to eat vegetables!

Ingredients

  • ½ red onion, thinly sliced
  • 1 courgette, diced
  • 2 tablespoons olive oil

Method

  1. Fry the onion and courgette in a pan with the olive oil for 5 minutes over a medium heat. Add the garlic slivers and cook for a further 1–2 minutes, then the pumpkin seeds and cook for 1 more minute. Season well and add the lemon juice.
