To try to turn out omelettes for much more than four obliterates you, the cook, from the sociable side of the meal altogether. I was once at a large party where omelettes were the main part of brunch (it was in New York City) but there were five chefs cooking them, and each had an array of bowls containing different fillings from which the guests chose, for their individual orders! I have never forgotten it.
