Lime, Parsley and Chive Butter

This is good with any grilled chicken, fish, or chops.

Ingredients

  • 8 oz/225 g slightly salted butter
  • Rind of 2 limes – the limes well scrubbed under r

Method

In a bowl beat the butter until it is soft, easiest done using a hand-held electric whisk, and beat in the lime rinds and, drip by drip, the lime juice. Lastly, beat in the salt and pepper and the parsley and chives.

Form the butter into a log shape in baking parchment and put it into the fridge. When it is firm and chilled, roll it into a cylinder and wrap it in clingfilm.
