Roasted peppers are the at the core of Macedonian cuisine and the first thing that comes to mind when I think of Macedonian food. They appeared on our table alongside nearly every meal. Although this recipe calls for spicy peppers, it can also be made with sweet peppers of any variety that you find in your grocery store or market.

Ingredients

  • 8–10 whole hot banana peppers
  • 1 teaspoon extra-virgin olive oil
  • 1 garlic clove, ver

Method

Roast the peppers over a charcoal grill or a gas flame until the skins are completely charred and blistered. Alternatively broil them in the oven (directly on the rack, or on a baking sheet lined with parchment paper), rotating them every 15 minutes until charred, 30 to 45 minutes.

Place peppers in a paper bag or heatproof container. Seal and set aside for 20 minutes until cool.
