Olives are a popular mezze. Although they don’t commonly grow in the Macedonian region, they have become a staple in the cuisine. For guests, I love to spice up my olives right before serving them. Slightly roasting them warms the natural oils and softens their flavor.

Ingredients

  • 2 lb (900 g) unpitted mixed olives stored in oil, drained
