Ajvar is popular throughout the Balkans, often served as a condiment for grilled meats, or simply with bread and cheese. Macedonians take their Ajvar very seriously. In the fall, when red peppers are in season in the region, families get together outdoors with dozens of pounds of peppers to make enough jars of Ajvar for the winter months to come.
