Roasting the garlic is not traditional for this dip but, as a child, I always found the raw garlic to be too pungent. My family believes that garlic cures all, so they amped it up any chance they could. I found that roasting the garlic and adding a little sour cream gives this dip richness and a mild, but well-rounded flavor.
