This recipe is something we make on lazy weekend afternoons and is one of my husband’s favorites. The addition of feta adds a bit of salty sharpness to the mild zucchini. Serve them with Kisolo Mleko So Pechen Luk (Yogurt with Garlic, Cucumber, and Dill) on the side.

Ingredients

  • 1 lb 5 oz (600 g) zucchini (3 medium), grated

Method

In a large mixing bowl, combine the zucchini, potato, scallions, and cheese.

In a separate small bowl, whisk together the flour, dill, paprika, salt, and black pepper.

Sprinkle the dry ingredients over the zucchini mixture and toss to coat. Fold the eggs into the zucchini mixture until fully incorporated.
