I love using a combination of cucumber varieties to give this salad a bit of dimension and texture. You can really use any kind you like, but if you’re using anything other than English or Persian cucumbers, I would recommend removing the seeds before slicing, since these can be quite bitter.

Ingredients

  • 1 English cucumber, skin peeled in stripes, sliced into ¼-inch (6 mm) rounds
  • 6 Persian cucumbers, skin peeled in stripes, sliced into ¼-inch (6 mm) rounds

Method

In a large bowl, combine the cucumbers, onion, and mint.

In a small bowl, whisk together the dressing ingredients.

Pour the dressing over the salad and gently toss just to coat.

Transfer to a serving dish and top with grated feta cheese.
