Beans grow feverishly in Macedonia. My father’s village is particularly known for growing beautiful beans. Growing up, we ate beans regularly in salads, soups, and stews. This salad uses white beans, but it can really be made with any bean you like. The addition of mint might sound unusual but it is very common in Macedonian cooking, especially with beans. My parents grow mint in their garden.
