These mildly spiced pork chops pair well with nearly any salad or side dish in this book. Using a mortar and pestle to create the paste really brings the flavors together, and is worth the extra effort.

Ingredients

  • 2 garlic cloves, coarsely chopped
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon

Method

Using a mortar and pestle, mash the garlic with the oil, paprika, salt, and black pepper to form a paste.

Pat the pork chops dry using paper towels. Smear the paste all over the meat. Transfer to a dish and cover with a lid or plastic wrap. Refrigerate for at least 1 hour to marinate.
