Typically, this is a very rich dish but I’ve taken a slightly lighter approach with my recipe. The traditional way to make this dish is to fry the eggplant and potatoes before putting it all together, which is delicious but very heavy. I prefer to roast the eggplant slices and boil the potatoes before assembly, and everyone I’ve made this for loves it just as much.
