This is a great meal for the summer months. As a young working mother, I love one-dish meals. My children love their vegetables sliced into rounds like little coins.

Ingredients

  • 1 red onion, sliced
  • 3 carrots, peeled and finely sliced into rounds
  • 3 zucchini, finely sliced into rounds

Method

Preheat the oven to 400°F (200°C).

In a small bowl, whisk together the marinade ingredients.
