These fish skewers are inspired by the street vendors of Macedonia’s lakeside villages and towns. I love to make them with a selection of mezze dishes when friends are coming over in the afternoon. I keep them marinated and pre-skewered in the fridge and just grill a few at a time throughout the day as we relax and graze on various dishes. You will need 8 to 10 metal or pre-soaked bamboo skewers (soak bamboo skewers for 20 minutes).
