This is a healthy, delicious way to enjoy any type of fish. I love to use large fillets of fish from my fishmonger. It is ridiculously easy to make and so impressive to serve. You can use any fish you like.
In a bowl, whisk together the melted butter, olive oil, salt, black pepper, parsley, lemon zest, and lemon juice to make a marinade.
Grease a baking sheet with olive oil. Place the fish on the greased baking sheet (skin side down) and pour over the marinade. Cover the fish with plastic wrap and refrigerate for 1 hour.
Place a rack in the middle of your oven and turn on the broil
