These are much coveted, especially in the Kavadarci region of Macedonia. When we were children attending Macedonian language school, there was a lovely old man who sold them outside of the school, and we always stopped to have one. They are common in Macedonian bakeries and are popular as an afternoon snack.
Place the warm water in a small bowl, add the yeast and ½ teaspoon sugar, and stir once. Cover the bowl with a plate and let stand until the yeast begins to foam, about 10 minutes.
