There are many varieties of almond cookies made throughout the regions of Macedonia, but these are the style we made at home, particularly when we attended bridal and baby showers, where it is customary for guests to bring a dessert for the sweet table.

Method

Preheat the oven to 350°F (180°C). Grease 2 large baking sheets with vegetable oil.

Using a stand mixer fitted with a paddle attachment or in a large bowl with a hand mixer, whisk the eggs. Pour in the sugar, vanilla, and oil. Mix at medium speed for 2 minutes.
