Bò bía is a Vietnamization of the Chinese Teochew popiah rolls. But aside from the fact that both are fresh rolls filled with Chinese sausage and jicama, the rolls are pretty different. In contrast to the Teochew version, which typically uses an egg-based wrapper, this Vietnamese variety puts the egg inside the roll, which is wrapped with rice paper. This was a weekly dish in my household when I was growing up.
