Cà ri gà, Vietnam’s most popular version of curry, stews tender chicken and potatoes in a rich and creamy coconut curry broth. A bit thinner and less spicy than Japanese or Thai curry, Vietnamese curry has a subtle, balanced sweetness and lightness. The consistency is more like a broth.

This is another staple at our home, a tradition inherited from my parents. It is great for large parties. My family loves to host, and I remember them serving this curry at just about every gathering
