Many regions of Asia, from Korea to Japan to China, have their own take on congee, which is rice boiled in a high percentage of water until it softens to a porridge-like consistency. One of our favorite ways to serve congee appeared on the menu of our former restaurant, Madame Vo BBQ. It features boiled oxtail that melts in your mouth, along with a special brown butter fish sauce that adds some flair to what is typically a mild, everyday meal.
