Cá kho is one of the culinary hallmarks of the Mekong Delta region in southern Vietnam, an area known for its abundance of seafood. Traditionally braised in the Vietnamese clay pot, it produces an intense, flavorful sauce as the juices of the fish caramelize with the sugar and other ingredients such as oyster sauce and soy sauce.
