Beyond savory dishes, corn can also be found in many Vietnamese dessert offerings like chè—a category of desserts best described as pudding or, in some cases, sweet soup. Though you can make chè with tons of different ingredients, from taro to mung beans, the go-to in my family is the corn version. My mom took great pride in choosing the best ears of corn at the market based on the warmth of their color, their size, or their juiciness. Made with coconut milk, this is a dessert that works we
