Chè khoai môn is a hearty and traditional Vietnamese taro pudding that combines the root vegetable with sticky rice topped with coconut milk. (Think potato soup, but sweet.) Cubes of taro are steamed until soft, then sweetened with sugar. Served hot or cold, it’s a versatile dessert to make and enjoy year-round. You can store this taro pudding for 2 to 3 days in an airtight container in the refrigerator (but don’t add the coconut milk until serving time).
