Created by Yen’s brother Khanh, our beverage director, this drink riffs on a classic cocktail called the Paper Plane, made with bourbon, amaro nonino, Aperol, and lemon juice. In this revision, we swap the bourbon for añejo tequila, the amaro nonino for amaro Montenegro, and the Aperol for Pimms No. 1, to yield a fruity, citrusy profile.
