Ingredients

  • a drizzle sunflower oil
  • 2 garlic cloves, crushed
  • ¾ cup plus 2 tablespoons canned coconut milk
  • 2 tablespoons crunchy or smooth peanut butter
  • 1 teaspoon soy sauce
  • a pinch dried chili flakes
  • a squeeze of lime juice

Method

  1. Heat the oil in a saucepan over low heat, add the garlic and fry a few minutes until soft but not colored. Add the remaining ingredients and bring to a boil, then reduce the heat and leave to simmer 3 to 4 minutes.
  2. Stir the sauce into a stir-fry for the last minute of cooking to heat through.
