If there is ever a time when you want to say “well done’—whether it is for a good grade at school, doing well at a sport, cleaning up a bedroom or just for good behavior—an indulgent sundae is the best way to say it. Well, it works in my house.
For the Hot Chocolate Fudge Sauce
3½ouncesdark chocolate, 70% cocoa solids, broken into small pieces
2tablespoonsunsweetened cocoa powder
⅓cupgolden syrup or light corn syrup
To make the fudge sauce, put the chocolate and cocoa powder in a large heatproof bowl. Rest the bowl over a pan of gently simmering water, so the bottom of the bowl does not touch the water. Stir occasionally until the chocolate melts. (Alternatively, you can do this in the microwave in 5-second bursts on Thaw or Low.) Remove the bowl from the heat and stir in all the remaining ingredients until smooth and well blended.
Layer up the sundae ingredients in tall sundae glasses or bowls and add whatever decorations you like. Spoon a little of the sauce over the ice cream and serve straightaway.
