Chimichurri is a tangy South American sauce for steak that makes this recipe into a delicious Saturday night treat, especially if you serve the steaks with chunky French fries. A ¾-inch-thick steak at room temperature takes about 5 minutes to cook to medium-rare if the pan is really hot before you put it in. Any leftover sauce keeps a few days in the refrigerator to serve with broiled, roasted or fried chicken or fish. You can also use it as a marinade or toss it with cooked vegetables.
