Every year at the end of October there is a famous chestnut fair at Mourjou in the lower Cantal, the centre of large chestnut plantations. Among the events there will be a cooking competition involving dishes that have to be based on chestnuts. The recipe below featured in the competition one year, and the cook kindly posted the recipe on the door of one of the buildings. A famous guest chef with many Michelin stars must have been in a bad mood because he refused to award a prize that year
